White Wine

Drunken Cheesy Bread

White wine and gooey Gruyère cheese blend together in a savory, one-pan dish.Hands-On Time 10 MinsTotal Time  20 MinsYield  Serves 4-6

Ingredients

  • butter for the pan
  • 1/2 baguette, cut into 2-inch slices
  • 1/2 small yellow onion, thinly sliced
  • 1/8 pound thinly sliced cooked ham
  • 3/4 cup white wine
  • 1/2 teaspoon black pepper
  • 1 1/2 cups (6 ounces) grated Gruyere

How to Make It

Step 1

Heat oven to 400° F. Place the bread in a buttered ovenproof skillet, a 9-inch square baking dish, or a casserole. Scatter the onion and ham over the bread. Pour the wine over the onion and ham and sprinkle with the pepper and Gruyère.Step 2

Bake until the cheese has melted and begun to brown at the edges, about 20 minutes. Spoon onto individual plates.

Pork Chops With Mustard Sauce

Spoon a creamy blend of wine and Dijon mustard over pan-browned and oven-roasted pork chops.Hands-On Time 15 MinsTotal Time  20 MinsYield  Serves 4 

Ingredients

  • 3 tablespoons olive oil
  • 4 1-inch-thick boneless pork chops (about 1 1/2 pounds)
  • kosher salt and black pepper
  • 2 shallots, finely chopped
  • 3/4 cup dry white wine
  • 2 tablespoons heavy cream
  • 1 tablespoon Dijon mustard
  • One tablespoon chopped fresh tarragon
  • 1 small head frisée, torn into pieces (about 4 cups)
  • One lemon, cut into wedges

How to Make It

Step 1

Heat oven to 400° F. Heat 1 tablespoon of the oil in a large skillet over medium-high heat.Step 2

Season the pork with ½ teaspoon each salt and pepper. Brown, 2 to 3 minutes per side.Step 3

Transfer the pork to a baking sheet and roast until cooked through, 5 to 7 minutes.Step 4

Meanwhile, add the shallots and 1 tablespoon of the oil to the skillet and cook, stirring often, until soft, 3 to 4 minutes.Step 5

Add the wine to the skillet and simmer until reduced by half. Add the cream and simmer until the sauce just thickens. Stir in the mustard.Step 6

Top the pork with the sauce and tarragon. Drizzle the frisée with the remaining tablespoon of oil and serve with the lemon wedges.

Red Wine

Quick Beef Bourguignonne

This easy take on the French classic cuts out half the usual ingredients, and calls for a decadent mushroom–red wine sauce over pieces of tender sirloin.

Ingredients

  • 1 tablespoon olive oil
  • 1 1/4 pounds sirloin steak, cut into 1-inch pieces
  • kosher salt and pepper
  • 1 10-ounce package sliced mushrooms
  • 1 16-ounce package frozen pearl onions
  • 2 cups red wine
  • 1 10.75-ounce can Campbell’s Golden Mushroom soup
  • 1/2 cup flat-leaf parsley, chopped (optional)

How to Make It

Step 1

Heat the oil in a large saucepan over medium-high heat.Step 2

Season the steak with ½ teaspoon salt and ¼ teaspoon pepper and cook until browned, about 5 minutes. Transfer to a bowl and set aside.Step 3

Add the mushrooms and onions to the pan and cook until the liquid has evaporated.Step 4

Add the wine and simmer until reduced by half, 5 to 6 minutes.Step 5

Stir in the soup and ¼ cup water and bring to a boil.Step 6

Add the steak and the juices from the bowl and simmer, 2 minutes. Divide into individual bowls and sprinkle with the parsley, if using.

Linguine With Red Wine Bolognese Sauce  

Spiced beef and diced tomatoes are simmered in red wine before topping steaming pasta.Hands-On Time  20 MinsTotal Time  35 MinsYield  Serves 4

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground chuck
  • One cup dry red wine
  • 3/4 cup whole milk
  • 1 28-ounce can diced tomatoes
  • 1/8 teaspoon ground nutmeg
  • kosher salt and black pepper
  • 2 tablespoons chopped fresh parsley
  • 1 pound linguine
  • 1/2 cup freshly grated Parmesan

How to Make It

Step 1

Heat the oil in a large skillet over medium-high heat. Next, add the beef and cook, crumbling with a spoon, until no longer pink, 5 to 7 minutes.Step 2

Add the wine and cook until the liquid has nearly evaporated, 4 to 6 minutes.Step 3

Finally, add the milk, tomatoes, nutmeg, 1 teaspoon salt, and ½ teaspoon pepper and bring to a boil.Step 4

Reduce heat and simmer until the sauce begins to thicken, 15 to 20 minutes. Stir in the parsley.Step 5

Meanwhile, cook the pasta according to the package directions. Drain, return it to the pot, and toss with the sauce. Serve with the Parmesan.
