So if you are having dinner with appetizers or just want something easy to pair with your favorite wine, we have an amazing recipe that will quickly become one of your favorites. You see what you are going to do is make an amazing Bloody Mary and make it into a gel. Agar Agar is a gelling agent similar to gelatin but made from seaweed. It works best for making a fluid gel like this. It’s amazing how that works so well.
Here is the simple recipe
3/4 cup (180g) bloody mary (any recipe, make sure to use vodka)
3/4 tsp (1.8g) Agar agar
Celery – cut into 2″ pieces with the bottom shaved a bit so it sits flat
Crispy Bacon
Paprika
- 1. Put the Bloody Mary in a saucepan. Sprinkle agar over the top and mix in with a whisk
- 2. Bring to a boil
- 3. Put it into a stainless steel bowl. Place into an ice bath in a larger bowl
- 4. Let mixture set until solid. Can be refrigerated at this point.
- 5. Cut gel into small cubes and blend in a blender or with a stick blender until smooth
- 6. Put into zip lock bag.
- 7. Cut a corner off with scissors to use like a piping bag.
- 8. Pipe mixture into celery
- 9. Garnish with crispy bacon and celery leaves.
- 10, Dust with paprika.
